Lower Slaughter Manor receives Third Rosette

Lower Slaughter Manor, a 17th Century country house located in the picturesque village of Lower Slaughter in the Cotswolds and part of the von Essen private collection of hotels, is delighted to receive a third AA Rosette, acknowledging the exceptional standard of cuisine, excellent service and the continued high standards of the hotel’s fine dining restaurant.

The award was announced last night, 2nd September, at the AA Centenary Awards 2008, a glamorous black-tie awards ceremony hosted by celebrity chef James Martin and attended by some of the world’s most renowned chefs, prominent hoteliers and hospitality gurus, at London’s Grosvenor House.

David Kelman, Head Chef at Lower Slaughter Manor, was on hand to receive the award in front of an audience of more than 1000. He commented, “I am thrilled to receive this third AA Rosette, which all of us feel is testament to our ongoing dedication to ensure that we offer the finest dining experience and the best in quality gourmet cuisine for our guests. It was my dream to move Lower Slaughter Manor from its 2 AA rosette status since joining the hotel in April 2005. It was part of von Essen hotels’ overall repositioning plan for Lower Slaughter Manor to not only refurbish the restaurant, but to build a new kitchen team and to develop the menu in keeping with the new image. During this time the hotel has also been accepted as a Relais & Chateaux property. Everything has come together and the award of 3 AA rosettes was the icing on the cake!

General Manager, Andrew Thomason, says of the award, “When I started at Lower Slaughter Manor in August 2006 I knew David’s cuisine was worthy of three Rosettes. Having worked as Resident Manager for four years at Raymond Blanc’s Le Manoir aux Quat’Saisons, I knew he had the right qualities to fulfil his dream, which then became our dream. I am thrilled not only for David, but for all the staff at Lower Slaughter Manor who have come on this journey with me to make Lower Slaughter Manor the finest hotel in the Cotswolds. I am immensely proud of all my team.”

Lower Slaughter Manor’s award-winning fine dining restaurant, acclaimed as one of the most superbly designed and most comfortable in the Cotswolds, is situated in what was originally a fifteenth century chapel, with wonderful views over the hotel’s immaculate lawn and terrace. The restaurant features intimate seating around a central banquette, Murano crystal and Ocean Blue chandeliers and walls clad in chocolate brown silk - all providing an exceptionally chic and stunning setting.

Renowned Head Chef, David Kelman, a member of the Welsh Culinary team for the past nine years, competing on the world stage, has been at the helm of the dining experience at Lower Slaughter Manor for over three years and offers a seasonal a la carte menu inspired by local fresh produce, combining contemporary English cuisine and French influence. As well as an integrated vegetarian menu and newly introduced, ‘fresh from the market’ fish menu, guests enjoy delicious dishes from a ‘Classics’ heading, including timeless favourites such as Smoked Salmon, carved at the table, whole grilled Lemon Sole, Chateaubriand, and Summer Pudding.

The experienced and highly talented Sommelier & Restaurant Manager, Rob Scott, offers guests over 250 wines from both the Old and New Worlds from his splendid and varied wine list and has an excellent selection of Vintage Dom Perignon, wines by the glass, an interesting selection of dessert wines and after-dinner digestifs.
